Home-made red velvet cupcakes with "Old-Fashioned Milk Buttercream" frosting. Recipes are from United Cakes of America by Warren Brown.

This wonderful cookbook includes at least one recipe for each of the 50 states plus the District of Columbia and Puerto Rico.

This recipe is attributed to New York, although as as Brown acknowledges, there are credible claims that red velvet cake originates in the South.

Cake recipes vary in their prescribed baking temperatures, either 350 or 325 degrees F. Brown prefers to split the difference at 335. With two pans at different levels filling the width of my oven, I chose to cook with convection at 320. The cake came out smooth and flavorful. There is no need to seek another recipe for red velvet cake. My only reservation is the expense of a full ounce of red food coloring, which cost nearly $3 at the supermarket.

The frosting is "Old-Fashioned Milk Buttercream," which I have never made before. The recipe calls for simmering a mixture of milk and flour for 30 seconds while whisking constantly. I thought I could stop whisking while I waited for the simmering to begin, but this was a mistake. I never saw anything that resembled a simmer. I worried that the frosting would not be good, because the flour-milk mixture was not smooth, but with extra mixing after putting all ingredients together, the frosting was OK. Still, next time, I will whisk till I take the flour and milk off the heat.

That part of the frosting needs to cool to room temperature, so it is a good idea to start it while the cake is baking. The recipe doesn't mention this.

Other options: cream cheese icing or seven-minute frosting. You don't want to use seven-minute frosting unless the cake will all be consumed right away.

This recipe makes two dozen. I'll be taking some to work tomorrow.

Lighting: Available light from two windows to the left. Because the windows are widely spaced, there was a distracting cross-lighting effect. I placed a white disk to diffuse the light from the window at 7 o'clock and this solved the problem. Additional light came from a mirror to the right of the hero cupcake.

The Joys of Jello, a General Foods 1963 cookbook using Jello in all of the recipes.

SEA DREAM SALAD

1 package (3 oz.) Jello Lime or Lemon-Lime Gelatin
1 1/4 cups boiling water
1 cup grated cucumber
1 tablespoon vinegar
3/4 teaspoon grated onion
1/2 teaspoon salt
Dash of cayene
1 pound shrimp, cooked and cleaned*

*Or use tuna, salmon or chicken salad

Dissolve Jello Gelatin in boiling water. Add remaining ingredients, except shrimp; force through sieve. Pour into individual ring molds or a 3-cup or 1-quart ring mold. Chill until firm. Unmold on salad greens. Fill rings with shrimp. Makes 2 1/2 cups gelatin, or 4 entrees with shrimp.

VEGETABLE TRIO

2 packages (3 oz. each) Jello Lemon or Lemon-Lime Gelatin
3 teaspoons salt
2 cups boiling water
1 1/2 cups cold water
3 tablespoons vinegar
1 1/2 cups finely shredded carrots
1 3/4 cups finely shredded cabbage
1 teaspoon minced chives
1 1/2 cups finely chopped spinach

Dissolve Jello Gelatin and salt in boiling water. Add cold water and vinegar. Chill until slightly thickened. Divide into three portions. Fold carrots into one portion; pour into a 9x5x3-inch laof pan. Chill until set, but not firm. Fold cabbage into second portion. Pour into pan; chill until set, but not firm. Fold chives and spinach into remaining gelatin. Pour into pan. Chill until firm. Unmold. Slice and garnish with crisp greens. Makes about 6 cups, or 12 side salads.

Serves 4 to 6 as a Main Course. Published September 1, 2003.

The fortified broth can be refrigerated for up to 3 days or frozen in an airtight container for up to 2 months. If you can get “petite cut” canned diced tomatoes, they can be used straight away after draining, without any additional chopping. The garlicky crostini (see related recipe) add another dimension of flavor and texture to the soup.

INGREDIENTS
Stock
1 large carrot , peeled and chopped medium
1rib celery , chopped medium
1 medium onion , chopped medium
3 medium portobello mushrooms , roughly chopped
1medium head garlic , outer papery skins removed and top third of head cut off and discarded
3tablespoons olive oil
1tablespoon tomato paste (heaping)
9cups low-sodium chicken broth or vegetable broth
2 medium leeks (about 1 pound), green parts chopped, white parts sliced thin crosswise
10sprigs fresh parsley leaves
4sprigs fresh thyme
2 bay leaves
1/2ounce dried porcini mushrooms , rinsed
Soup
1 can (14 1/2 ounces) diced tomatoes , drained, tomato pieces chopped coarse
2 small russet potatoes (about 12 ounces), peeled and cut into 1/2-inch cubes (about 1 1/2 cups)
2 medium carrots , peeled and cut into 1/2-inch cubes (about 1 cup)
1/2 medium celeriac (about 12 ounces), peeled and cut into 1/2-inch cubes (about 1 1/2 cups)
1small head escarole (about 12 ounces), washed, stemmed, and leaves cut into 1-inch pieces (about 4 heaping cups)
1cup frozen baby lima beans (6 ounces) defrosted (optional)
2tablespoons minced fresh parsley leaves
INSTRUCTIONS
1. FOR THE STOCK: Adjust oven rack to middle position; heat oven to 450 degrees. Place carrot, celery, onion, portobellos, and garlic head on rimmed baking sheet; drizzle with oil and toss to coat. Add tomato paste and toss again until evenly coated. Spread vegetables in even layer, set garlic head cut-side up; roast until vegetables are well browned, 25 to 30 minutes.

2. Combine roasted vegetables, broth, leek greens, parsley, thyme, bay, and porcini in large heavy-bottomed Dutch oven; cover and bring to simmer over medium-high heat, then reduce heat to medium-low and simmer, partially covered, 30 minutes. Remove garlic head; using tongs, squeeze garlic head at root end until cloves slip out of their skins. Using fork, mash garlic to paste in small bowl and set aside. Strain stock through large fine-mesh strainer, pressing on solids to extract as much liquid as possible; discard solids in strainer.

3. FOR THE SOUP: Rinse out and wipe Dutch oven; add tomatoes, potatoes, carrots, celeriac, reserved whites of leeks, strained broth, and garlic paste to pot and bring to simmer over medium-high heat, then reduce heat to medium-low and simmer, partially covered, until vegetables are tender when poked with skewer or paring knife, about 25 minutes. With back of wooden spoon, mash some potatoes against side of pot to thicken soup. Stir in escarole and lima beans (if using); cook until escarole is wilted and limas are heated through, about 5 minutes. Stir in parsley; adjust seasonings with salt and pepper. Serve immediately with crostini floated on soup, if desired.

Of all the kind of meat, lamb is the most challenging to cook well. Actually, even now I'm still figuring out the best way to cook it. The nature of lamb meat is that the texture and taste will alter significantly if you under cook or overcook it so timing and heat control is key. I have always wanted to duplicate the juicy tender lamb chops that are available in the best fine dining restaurant. This one so far is the closest I can get.

Tenderizing : Put chops in a bag. Cut a lemon and squeeze lemon juice over the meat. Throw in the husk and leave in fridge for an hour to tenderize the meat.

Marinating : Remove chops and dry off, then transfer to another new bag. Add olive oil, honey, salt, Worcestershire sauce, terriyaki sauce and black pepper. Drizzling red port wine over chops. Leave in fridge to marinate for 4 hours.

Cook the chops over a barbecue grill under medium fire. Flip periodically so that chops won't burn on one side. Lamb is cooked when it turns brown with some traces of black crusts.

Note : If you do not have a barbecue grill or don't want all the smoke and cleaning up later, you can cook the chops in a frying pan. But the results will be less desirable as the lamb will then cook in it's own juice and usually turns soggy.

To prepare the sauce, mix olive oil, sherry wine, sugar, sweet and sour source and dry mint leaves in a small pan. Bring sauce to boil.

Pour sauce over chops and served. Goes well with baked potato or some veges

served with chilled butter slabs, the sweet potato is nicely cooked all the way through. even the purple-red skin is edible, and if done right has a very nice texture (tonight's was almost perfect).

this sweet potato takes ages to grill so it's best to order it right at the beginning. even better, place an order in advance when you make your reservation as they tend to run out of stock.

Cloverfield and LOST producer J.J. Abrams and I'll be working on a movie that would revolutionize movies and special visual effects and will release it on November 16, 2012. It is called...

DINOSAURS: AN EPIC PREHISTORIC TALE (2012)!!!

And Although the Dinosaurs will talk, and although many of the species of animals depicted in my movie do not exist at the same time and place, It's gotta be the biggest, greatest, coolest, most awesome, most spectacular, most ambitious, most groundbreaking, most totally epic, and most ultimate dinosaur movie since Jurassic Park (1993)!

It will be shot and exhibited completely on Digital HD Video and in an aspect ratio of 2.35:1 but with plates shot in the brand new VistaVision Digital format to make the dinosaurs more grander and give them more height. (The VistaVision plates will be blown up to fit the 2.35:1 ratio.) It will be have a total budgetary production cost of $330 million. It will have a theatrical running time of 3 hours and 20 minutes (that is 200 minutes). And It will be an animated feature or so that will blend CGI and Animatronic Dinosaur characters and Innovative and Groundbreaking VFX wizardry (including Weta Digital's MASSIVE software to create AI-Driven Dinosaur agents) with a Blend of Digitally Enhanced Live Action Photography, Miniature model sets (including what Weta Workshop called "bigatures) and digital CG environments and digital matte paintings, to groundbreaking effect.

It will be about 11 dinosaurs (which are Adam, David and Eve the Iguanodons, Tearak the Troodon, Adam's best friend, Kirk the Triceratops, Samson The Stegosaurus, Maia the Maiasaura, Courtney the Corythosaurus, Frank the Lambeosaurus, George the Parasaurolophus and Anthony the Brachiosaurus) traveling through unknown and uncharted Prehistoric Lands, 65 million years ago, to find a legendary land far, far away called the Valley of the Sun. Along the way, They encountered a variety of dinosaurs and overcome obstacles and predators such as The chief villains, Three Tyrannosaurus Rex brothers named Akiro, Khan and Lucifer, their friends, Durok and Kala the Utahraptors and their army of 300 Raptors, and among others, a ruthless and massive Spinosaurus named Crocjaw.

It will be directed by Me and Cloverfield and LOST producer J.J. Abrams and I will produce it and it'll be released on 5,298 D-Cinema, Digital 3D (Real D) and IMAX 3D theatre screens on November 16, 2012. It will have a gigantically massive publicity, promotional, advertising and marketing campaign. It will have bigger marketing and an even wider theatrical release than any other movie on Dinosaurs. It will have a theatrical run that will last 338 days from November 16, 2012 to October 20, 2013.

After that, It will be released on DVD and Blu Ray Disc or HD DVD from Tim Box Home Entertainment on October 22, 2013. It will arrive in a 12-disc jam-packed, super uber, ultra-deluxe, ultimate collector's edition box set for each format. Discs One, Two, and Three will feature a 330 minute unrated Final Cut of Dinosaurs: An Epic Prehistoric Tale (titled Dinosaurs UNRATED: The Final Cut) with 2.40:1 anamorphic widescreen direct to digital transfer, two Dolby Digital EX 5.1 and DTS ES 6.1 Enhanced Home Theater Mixes, commentaries and more.

Discs Four and Five will feature the 200-minute theatrical cut with 2.40:1 anamorphic widescreen direct to digital transfer, two Dolby Digital EX 5.1 and DTS ES 6.1 enhanced home theater mixes, commentaries and more, while Discs Six, Seven and Eight will feature a 398-minute documentary called 65 Million Years BC: The Making of Dinosaurs: An Epic Prehistoric Tale. (split into three discs just like the unrated cut of Dinosaurs.) and Lastly, Discs Nine, Ten, Eleven and Twelve will feature tons and tons and tons and tons of bonus features.

The packaging will be awesome with 6 digipak trays containing the 12 discs for the box set.

Dinosaurs: An Epic Prehistoric Tale will be mixed in Dolby Digital Surround EX, DTS ES, and SDDS 8-Channel Sound at Skywalker Sound and Park Road Post. Skywalker Sound and Park Road Post and Sound Designers Randy Thom, Christopher Boyes, Ethan Van Der Ryn, David Farmer, Tom Myers and Star Wars Prequels sound editor Matthew Wood, and Will Files, in creating the most believable dinosaur vocalizations ever heard in a movie since Jurassic Park (1993), will employ the same technique that Sound Designer Gary Rydstrom had employed for Jurassic Park 15 years ago--to start with nature by recording a whole lotta living animals and piece them together in interesting ways...totally interesting ways, indeed.

The original music score for my dinosaur movie will be by Hans Zimmer, James Newton Howard, Mark Mancina and/or James Horner, and it will sound like the music of The Lion King (1994) and those of Disney's Dinosaur (2000), Disney's Tarzan (1999), Disney's Mighty Joe Young (1998), Waterworld (1995), The Power of One (1992) (with its african-style music), The Jurassic Park
