Mini-Egg Hazelnut Chip Cookies.

Mini eggs are my favorite holiday related candy, hands down. I have been going back and forth in my mind with, "these are disgusting and wrong," and, "these are genius." They are very sweet because of the milk chocolate and the candy shells.

This is my favorite chip cookie recipe base, the add-in's are all up to what you like - I've done different nuts, fruits, with and without chocolates, added other spices and flavors. You could do more nuts than chocolate, you could do just chocolate, etc., etc.

It's very forgiving. You just HAVE to put in at least three cups (for the larger batch) of add-in's or the cookies will spread out into pancakes.

Chocolate Chip Nut Cookies

oven @ 350 F

x 1/16

unsalted Butter - 2 1/2 oz soft
White sugar - 2 oz
Brown sugar - 2 oz
Salt - 1/4 tsp
Vanilla - 1/4 tsp

Egg - 1/2**

Baking soda - 1/4 tsp heaping
AP Flour - 2 1/2 oz
Cake Flour* - 1 1/4 oz

Nuts - 3/4 cup chopped
Chocolate Chips - 3/4 cup + 2 tbsp

unsalted Butter - 5 oz soft
Sugar - 4 oz
Brown Sugar - 4 oz
Salt - 1/2 tsp
Vanilla - 3/4tsp

Eggs - 1

Baking Soda - 1/2 + 1/8 tsp
AP Flour - 5 oz
Cake Flour* - 2 1/2 oz

Nuts - 1 1/2 cups
Chocolate Chips - 1 3/4 cups

*If you don't have Cake Flour, just use AP. I'd be hard pressed to tell the difference in the finished product.

**Crack your whole egg into a wet measure and whisk it, then pour half into the bowl.

- Cream butter, sugars, salt and vanilla until everything has just barely come together to make a sort of delicious paste, you do not want to incorporate air, or you will get cakey cookies.
- Add egg until just combined
- Add baking soda, flours, nuts and chocolate and stir until dough forms (make sure all dries are combined from the bottom of the bowl)
- Portion into rounds (I like using my little #50 5/8 oz scoop, and sometimes just using a teaspoon, but they can be larger or smaller)
- Space evenly on a parchment lined baking sheet, they will spread out
- Bake at 350 F for 10 - 20 minutes or until golden around the edges and just barely starting to brown in the centers
- Store cooled, baked cookies in an airtight container.
- Unbaked portioned cookies freeze very well and will only take a few more minutes bake time.

Besoin d'un petit coup de fouet?

200 g de petits-beurre / 0,4 pound petits-beurre cookies
75 g de beurre / 0,15 pound butter
125 ml lait concentre sucre / 4 oz sweet condensed milk
Le zeste d'un citron / 1 lemon zest
1 cuillere a cafe de gingembre en poudre / 1 ginger powder teaspoon
150 g de chocolat noir / 0,35 pound dark chocolate

200 g de sucre glace / 0,4 pound icing sugar
10 g de beurre / 0,02 pound butter
2 cuilleres a soupe de jus de citron / 2 teaspoon of lemon juice

Ecraser finement 150 g de petits beurre et 50 g plus grossierement / Mash ? of cookies into a fine powder and the other quarter more rought (?)
Faire fondre le beurre puis le chocolat dans le lait a feu doux sans arreter de melanger / Melt butter and chocolate heating milk gently and without stop stiring
Ajouter le zeste du citron et le gingembre / Add lemon zest and ginger
Ajouter aux biscuits et bien melanger / Ad to the cookies and mix well
Etaler cette pate dans un moule carre / Pour this pastry into a square mould
Laisser au frigo 1 heure environ / In fridge for 1 hour

Pour le glacage, faire fondre ensemble au bain-marie le sucre glace, le beurre et le jus de citron / Melt together icing sugar, butter and lemon juice in a bain-marie
Verser cette creme sur la pate / Pour this cream on the dough
Refrigerer plusieurs heures / In fridge several hours
Decouper en carres / Cut pieces
