Barbecue Lamb Chops
Of all the kind of meat, lamb is the most challenging to cook well. Actually, even now I'm still figuring out the best way to cook it. The nature of lamb meat is that the texture and taste will alter significantly if you under cook or overcook it so timing and heat control is key. I have always wanted to duplicate the juicy tender lamb chops that are available in the best fine dining restaurant. This one so far is the closest I can get.
Tenderizing : Put chops in a bag. Cut a lemon and squeeze lemon juice over the meat. Throw in the husk and leave in fridge for an hour to tenderize the meat.
Marinating : Remove chops and dry off, then transfer to another new bag. Add olive oil, honey, salt, Worcestershire sauce, terriyaki sauce and black pepper. Drizzling red port wine over chops. Leave in fridge to marinate for 4 hours.
Cook the chops over a barbecue grill under medium fire. Flip periodically so that chops won't burn on one side. Lamb is cooked when it turns brown with some traces of black crusts.
Note : If you do not have a barbecue grill or don't want all the smoke and cleaning up later, you can cook the chops in a frying pan. But the results will be less desirable as the lamb will then cook in it's own juice and usually turns soggy.
To prepare the sauce, mix olive oil, sherry wine, sugar, sweet and sour source and dry mint leaves in a small pan. Bring sauce to boil.
Pour sauce over chops and served. Goes well with baked potato or some veges
served with chilled butter slabs, the sweet potato is nicely cooked all the way through. even the purple-red skin is edible, and if done right has a very nice texture (tonight's was almost perfect).
this sweet potato takes ages to grill so it's best to order it right at the beginning. even better, place an order in advance when you make your reservation as they tend to run out of stock.
